  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 250g cocktail cherries (optional)

  1. Grease and flour a 23 or 26cm tube cake tin. Preheat oven to 180 C / Gas 4.
  2. Mix together oil, sugar, eggs, pineapple, bananas, pecans, flour, vanilla, bicarbonate of soda, cinnamon, salt and cherries, if using. Pour into prepared tin.
  3. Bake for about 1 1/2 hours at 180 C / Gas 4.

I was really disappointed with this cake. The ingredient list sounded so yummy, but it overflowed out of the cake tin & it tasted WAY too oily.I think I'll stick to my old banana cake recipe & just add pineapple.Looks like the other readers have changed the recipe & then given it 5 stars which isn't very helpful for people like me who just make the recipe as it appears.-15 Jun 2005

The fruitcake may have originated in ancient Egypt or the Roman Empire. The confection was, and still is, widely loved in England, where it was originally called plum cake, and was served at weddings and other celebrations. How the fruitcake made it to Louisiana is hard to determine. Nevertheless, fruitcake is commonplace on the Christmas table in Bayou Country.


Method:
Preheat oven to 350°F. In a large mixing bowl, combine candied dried fruit mix, raisins, dates, whiskey and wine. Blend well and allow to marinate at room temperature approximately 30 minutes. Grease and flour 6 (4" x 9") loaf pans. Line bottom of pans with parchment paper to prevent sticking. Set aside. In an electric mixer, cream butter and sugar. Add eggs, one at a time, continuing to blend. Fold in baking soda, nutmeg, cinnamon, vanilla and fig preserves. Continue to blend on medium speed until well mixed. Pour in coffee then add flour, one cup at a time, blending until mixture is smooth. Pour contents into mixing bowl with marinating fruit. Fold in pecans, pineapple and whole cherries. Using a rubber spatula, blend until ingredients are evenly distributed. Pour mixture into greased pans and bake 35 minutes. Open oven, carefully slide shelf out and decorate the top of each cake with five red and green cherry halves and five pecan halves.

  • ¾ cup finely chopped peeled apple
  • 2 tablespoons cold butter
  • ¼ cup sugar
  • 1 cup chopped pecans

Preheat oven to 350 degrees F. Line an 8-inch-square pan with foil, leaving an overhang on all sides. Lightly coat the foil with cooking spray.

To prepare cake: Whisk 1 cup flour, cornmeal, baking powder and salt in a medium bowl. Beat softened butter and oil in a large bowl with an electric mixer on high speed for 2 minutes. Scrape down the sides. Add 3/4 cup sugar and beat on medium-high until smooth, about 2 minutes. Add eggs, milk, lemon zest and vanilla and beat on medium-high until smooth, about 1 minute. Scrape down the sides. Add the flour mixture and beat on low speed just until incorporated.

Place berries and apple in a small bowl, sprinkle with the remaining 1 1/2 teaspoons flour and toss very gently to coat. Sprinkle the fruit over the batter and very gently fold in until just combined. Scrape the batter into the prepared pan, smoothing the top.

To prepare topping: Combine cold butter and 1/4 cup sugar in a bowl. With two knives or a pastry blender, cut them together until the butter is in small pieces and uniform crumbles form. Add pecans and toss until evenly incorporated. Sprinkle the topping over the batter.

Bake the cake until a tester inserted in the center comes out clean and the nuts are a deep brown, 50 to 55 minutes.

Let the cake cool in the pan on a wire rack for about 2 hours. Lift it out of the pan, using the edges of the foil, onto a cutting board, and cut into 16 squares. Use a spatula to lift the cake from the foil.

Make Ahead Tip: Bake, cool, cover in the pan and hold at room temperature for up to 1 day. Before serving, unwrap and heat at 300°F for about 20 minutes.

  • 4 tablespoons unsalted butter, cold, cut into 1/2-inch chunks

For the Cake

  • 2 cups all-purpose flour, spooned into measuring cup and leveled-off
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick (1/2 cup) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1-1/2 teaspoons vanilla extract
  • 1 teaspoon packed lemon zest, from 1 lemon
  • 1/2 cup milk
  • 2 cups fresh blueberries (frozen may be used but do not defrost)

Instructions

  1. Make the streusel topping: Combine the brown sugar, flour, cinnamon, and salt in a small bowl. Using your fingers, mix until no lumps of brown sugar remain. Rub in the butter with your fingertips until it reaches a crumbly state. Refrigerate until ready to use.
  2. Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 9-inch square pan with butter or nonstick cooking spray.
  3. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  4. In the bowl of an electric mixer, beat the butter and granulated sugar until creamy, about 2 minutes. Add the eggs one at a time, scraping down the sides of the bowl and beating well after each addition. Beat in the vanilla extract and lemon zest.
  5. Gradually add the flour mixture, alternating with the milk, beating on low speed to combine. Add the berries to the batter and fold gently with a spatula until evenly distributed. Do not over-mix.
  6. Transfer the batter to the prepared pan and spread evenly. Sprinkle the streusel topping evenly over the batter. Bake for 40 to 45 minutes, until golden brown around the edges and a cake tester comes out clean. Let cool in the pan on a rack for about 20 minutes, then serve right from the pan.
  7. This cake is best served on the day it is made. Leftovers will keep well for a few days wrapped in foil and stored at room temperature.
  8. Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, double-wrap it securely with aluminum foil or plastic freezer wrap, or place it in heavy-duty freezer bag. Thaw overnight on the countertop before serving.

Ingredients

2 1 ⁄ 4 cup + 3 tablespoons all-purpose flour

1 1 ⁄ 2 cup low fat buttermilk

1 cup finely chopped pecans

9 oz. reduced less fat cream cheese, softened

1 ⁄ 4 cup + 1 Tbsp butter, softened

Directions

Preheat oven to 350 ° F. Spray and flour two 9” round pans.

In a large bowl, combine the flour, Truvia Cane Sugar Blend and Brown Sugar Blend, baking soda, and salt. In a smaller bowl, combine buttermilk, melted butter, maple syrup and vanilla.

Stir the wet mixture into the dry mixture, then fold in the chopped pecans.

Divide the mixture into the round pans and bake for 20-25 minutes or until toothpick inserted in middle comes out clean. Let the cake layers cool in pan for 10 minutes before removing them onto a wire rack to cool completely.

GLAZED PECANS

In a small saucepan bring the corn syrup to a boil, then stir it for 1 minute or until slightly thickened. Remove from heat and stir in pecan halves until coated.

Remove the coated pecans from the syrup and place them in a single layer on a foil-lined baking sheet.

FROSTING

In a small bowl, beat the cream cheese, butter, and syrup until smooth.

Pour 2 1 ⁄ 4 cups of Truvia Cane Sugar Blend in a blender and grind on high speed grind until powdered.

Blend the powdered Cane Sugar Blend into the cream cheese mixture until smooth.
