Potato bread

Peel the potatoes, wash them, cut them and boil them in salted water.

After they have boiled, they are passed as puree.

The yeast is mixed with sugar, 1 lg flour, 1 lg hot water. Leave to rise for 10-15 minutes.

In a bowl put salt, mashed potatoes, mayonnaise and flour, water. Knead an elastic, slightly sticky dough.

Cover the bowl with a clean napkin and let the dough rise until it doubles in volume.

After it has risen, place the dough on the floured table, knead a little more, shape it, put it in a greased tray and lined it with baking paper.

Leave to rise for another 15 minutes.

Grease with oil and bake in a preheated oven over medium heat until nicely browned.

After baking, remove from the pan, grease with oil, cover with a clean napkin and allow to cool.

Everything you do is extraordinarily good. Over the weekend I prepared my son gulyas, cabbage from Cluj, the cherry cake and the mascarpone roll (it's his favorite) and he ate with his friends and said that they ate kings. My thought of gratitude went to you. So an infinite beautiful thank you!

Anton, Mihaela, if you want to make bread with potatoes in the head-to-tail machine, that is, just put the ingredients there and set a program, you will not get the same type of core. only if now the cars are more advanced than I have and more kneading and growth steps can be set. but with one program I failed to get such a core. but in this recipe you can use the machine for kneading steps, it's very helpful there.

I used to make it head to tail on the bread machine, years ago when I used yeast. Now I have given up the commercial yeast and I prepare the bread only with natural mayonnaise, but also with the bread machine. That's right, it takes a little longer.

Ingredients Potato bread

400 gr white flour (type BL55)
120 gr boiled potatoes
2 teaspoons grated dry yeast (about 4-5 gr)
1 teaspoon salt
2 tablespoons oil

Pieces: 1 loaf of 500 gr

Preparation Potato bread

  1. For this recipe you need about 2 medium potatoes that you cut into cubes (if they have a thin and healthy skin you can leave them unclean if the skin is thickened or withered then you clean them) and boil them in salted water. Drain the potatoes and let them cool. Collect 250 ml of water in which the potatoes were boiled and let it cool. You can continue with the next step only when the potatoes and water are warm.
  2. Mash the potatoes as for puree and weigh 120 gr of puree, that's all you need in the recipe.
  3. Add salt and oil over the potato. Interfere. Add 120 g of flour and dry yeast and mix again. Add 250 ml of water from the potatoes and mix for 5 minutes (you can use a mixer at low speed or simply a fork). The result will be a slightly thicker dough than pancakes.
  4. Cover the bowl with a towel and leave it in a warm place (about 28C) for 1 hour to activate the yeast. This is the mayo.
  5. Add 1/3 of the rest of the flour (ochiometrically, you don't have to weigh it) and knead for 5 minutes (manually or with the dough kneading robot). The dough is now very sticky and soft. Add 1/2 of the remaining flour and knead for another 5 minutes. Then the rest of the flour and knead for another 5 minutes. You will get a dough that is still sticky, but firm enough not to lose its shape (see picture 2).
  6. Place the dough in a bowl greased with a little oil, cover with a towel and leave in a warm place for 1.5 hours (until it doubles in volume).
  7. Pour the dough raised on the work table with a little flour. Stretch lightly with your hands until you have a square / rectangle. Roll out the dough and place the rolled side down in the oven tray (with baking paper on the bottom and sprinkled with a little flour).
  8. Put the bread tray in a plastic bag and let it rise for 30 minutes. Until then, heat the oven to 220C and place a saucepan of water on the bottom of the oven, which will generate steam in the oven.
  9. If you want, cut the bread in 2-3 places with a sharp cutter. Put the bread in the oven. Immediately remove the pan with water. Bake the bread for 10 minutes. Then lower the temperature to 190C and bake for another 30 minutes.
  10. Allow the bread to cool before cutting.
