Simple but superb recipe to share that can be easily put together in minutes to add to the experience of a romantic Valentine's evening!

- 2 green peppercorns
- 2 red peppercorns
- 4 shallots, finely diced
- 2 cloves garlic, crushed
- 4 limes, 1 zested and 4 juiced
- chopped basil to taste
- chopped coriander to taste
- 50ml olive oil

- Start by preparing your oysters. Get your fish monger to show you how to shuck the oysters or do it for you. Keep the base part of the shell for presentation.
- Crush green and red peppercorns in a mortar and pestle.
- In a mixing bowl add your finely diced shallots, crushed garlic, zest of 1 lime, juice of the limes, peppercorns and your freshly chopped herbs. Whisk in your olive oil and leave to infuse for 20 to 30 minutes before using with the oysters.
- Arrange the shells on a serving plate and place the oysters back in their shell. Just before serving spoon over the marinade to fill the shell. Don’t do this too soon as the oysters will cook in the lime juice in about 10 minutes or so.
Relax and enjoy the rest of your evening. I would always recommend a bottle of champagne to go with this recipe!

Valentine’s Day Recipes: Baked Oysters and Dark Chocolate Crème Brûlée
With the aphrodisiacal properties of oysters and chocolate, what better time to try out some new oyster and chocolate recipes than Valentine’s Day?
Awarded the AAA Four-Diamond Award of Excellence, and an 11-time winner of Wine Spectator’s Dining Guide Award of Excellence, Mirror Lake Inn’s cozy restaurant, The View, and its executive chef, Jarrad Lang, share two delicious recipes for baked oysters and a dark chocolate crème brûlée. Grab a bottle of wine, start up the fireplace, and impress your sweetie with the Inn’s award-winning dishes from the comfort of your own home.
BAKED OYSTERS (WITH BACON, LEEKS, AND FRIED SHALLOTS) INGREDIENTS:
12 oysters, well cleaned and opened on the half shell
3 slices smoked bacon, 1/4” thick
2 leeks, whites only
Salt and pepper
1 pint cream
2 oz. butter
2 oz. flour
5-10 black peppercorns
1 bay leaf
Sprig of fresh thyme
4 oz. Camembert cheese, rind removed, cubed
1 cup buttermilk
Fresh parsley, chopped
1. Cut the bacon into ¼” lardons and render out in a sauté pan over low heat. When the fat is rendered out and the bacon is crisp, remove from oil and drain on paper towels.
2. For the leeks, remove the green and root ends, cut in half lengthwise and wash well. Julienne the leeks on a bias and sweat in a sauté pan with butter until soft and tender. Season with salt and pepper.
3. In a sauce pan, make a roux by melting the 2 oz. of butter and adding the flour, allow to cook over low heat for a couple of minutes. Add the cream to the roux while stirring with a whisk, making sure there are no lumps, add peppercorns, bay leaf and thyme, bring to a simmer and cook for 20 minutes, stirring often. Remove the sauce from the heat and add in the Camembert, stirring until melted in. Pass sauce through a fine wire strainer, and adjust consistency with cream or milk if necessary.
4. For the shallots, peel and cut shallots into thin round slices, as if making little onion rings. Soak shallots in buttermilk for 5 minutes, drain well and toss in seasoned flour. Shake off excess flour and deep fry in oil heated to 375° until golden brown. Drain off on paper towel.
5. Set the oysters up on a baking pan lined with salt (to keep oysters from tipping and sliding around). Add the leeks and bacon to each and then top with the sauce, bake in a 425° oven for 5-7 minutes or until the sauce starts to bubble and slightly brown. Top each oyster with some crispy shallots and fresh chopped parsley to finish and serve.
Preparation for this dish may be done a day in advance. Shucked oysters may be used and baked in small oven safe dishes.
DARK CHOCOLATE CRÈME BRÛLÉE INGREDIENTS:
1 quart heavy cream ½ tsp vanilla
6 oz. sugar 1 cup egg yolk
6 oz. dark chocolate chips
1. In a sauce pot heat the cream, sugar, and vanilla to a boil.
2. Slowly pour half the hot mixture into the yolks, stirring constantly with a whisk, to temper the yolks.
3. Pour the tempered yolks back into the cream mixture, add the chocolate and stir until melted and smooth.
4. Pour or ladle the chocolate mixture into oven safe dishes, no more than an inch deep, and bake in a water bath at 325° until set. Crèmes should shake like jello when done, about 20 to 30 minutes. Be careful not to overcook.
5. Cool at room temperature for 1 hour, and then move to cooler.
To serve: Cover the tops of crèmes with sugar, shake off excess. Caramelize the sugar with a brûlée torch. Garnish with berries. If you don’t have a torch, use the broiler.

Love oysters with restaurateur Mark Hix's recipe for romance

&bull For the best flavour, eat as soon as possible. If you do need to store oysters, lay them flat side up on a tray in the fridge and cover with a damp cloth, replacing it if it dries out. They will keep for two days stored like this.
&bull Oh shucks! To shuck fresh oysters, you need a thick tea towel and an oyster knife (or couteau à huitres), which has a short fat blade and guard. Wrap the tea towel around the wrist and hand holding the oyster, in case the knife slips. Carefully insert the blade of the knife into the narrow hinge end of the shell, then work the knife until the ligament is severed. Next, prise the top and bottom shells apart by working the blade around between them. Remove the top shell, then loosen the oyster from the bottom one.

Raw Oysters with Beet Horseradish from Dylan’s Oyster Cellar
“Our favorite way to eat oysters is dressed simply with prepared horseradish and lemon,” says Dylan Salmon, co-owner of Dylan’s Oyster Cellar. “For Valentine’s Day, we thought that adding beets for a pop of deep red to the gray color of horseradish would put a sweet, earthy, and colorful twist on an otherwise drab but spicy condiment.”
Fresh horseradish root, at least 4 inches, peeled and cut into small cubes
15-ounce can cooked beets, drained
4 tablespoons white vinegar
1 teaspoon sugar
1 teaspoon salt
Fresh-shucked oysters (pick up available at Dylan’s, of course.)
1. Add horseradish chunks a little bit at a time into the feeding tube of your food processor.
2. Pulse several times, scraping down the sides if needed.
3. Add drained beets and pulse a few more times.
4. Add vinegar, sugar, and salt and process for 30 more seconds or so, until you get a nice finely textured consistency.
NOTE: Horseradish sauce will keep in a tightly sealed container in the fridge for three days, but it will lose heat over time. If you like it hot and zingy, eat it within a few hours after you prepare it.
WARNING: Do not breathe in too closely to freshly grated horseradish, as it is blindingly hot. Also, start with a tiny bit when you first taste to ensure you can stand the heat.

8 ounces of pure chocolate
2⁄3 cup heavy cream
1 tablespoon unsalted butter
1⁄2 teaspoon vanilla extract
1⁄2 teaspoon sea salt
1. Place chocolate in heat-resistant mixing bowl and set aside.
2. Heat heavy cream until it begins to simmer.
3. Once simmered, add butter and sea salt.
4. Pour hot liquid in the bowl of pure chocolate and allow cream to soften chocolate.
5. Add vanilla extract and mix ingredients until you achieve a smooth consistency.
6. Wrap bowl in plastic wrap and refrigerate for two hours.

4 1⁄4 cups confectioner’s sugar
1 cup cocoa powder
2 1⁄8 cups walnuts, toasted and chopped
Pinch of salt
1 cup egg whites, pasteurized
1. Sift confectioners’ sugar and cocoa powder into a large bowl.
2. Mix cocoa powder mixture with walnuts and salt.
3. Pour in egg whites while mixing. (You can mix by hand or at a low speed with a mixer.)
4. Mix until just combined. (Do not over mix.)
5. Scoop dough with a 2-ounce cookie scoop onto a cookie sheet lined with parchment.
6. Bake at 350 Fahrenheit for five minutes.
7. Turn and bake for an additonal five minutes.
